Tự làm đậu phụ tại nhà vừa ngon vừa không lo chứa thạch cao

Đậu phụ là món ăn quen thuộc được nhiều ăn ưa thích vì đậu mềm mịn, thanh mát, có thể chế biến thành nhiều món hấp dẫn. 

Tuy nhiên, do lo ngại đậu phụ có chứa thạch cao, nhiều người không dám mua ăn. Bài viết sau đây sẽ mách bạn cách tự làm đậu phụ tại nhà ngon, sạch, không chứa thạch cao.

Nguyên liệu làm đậu phụ:

Đậu nành – nguyên liệu chính để làm đậu phụ

– 250g đậu nành khô

– 1,2 lít nước

– 20ml giấm

– 20ml nước cốt chanh

– 20g muối

– 100ml nước lạnh hòa chung trong 1 cái bát

Cách làm đậu phụ tại nhà:

– Đậu nành vo sạch ngâm qua đêm. Sau đó xả qua nước lạnh thật sạch (bạn có thể bóp bỏ vỏ tùy ý). Cho đậu nành cùng với lượng nước phía trên vào máy xay nhuyễn.

– Cho hỗn hợp trên vào miếng vải mỏng vắt lấy nước. Cho nước đậu nành vào nồi nấu sôi 20-25 phút ở lửa vừa. Sau đó cho chén giấm, chanh, muối vào khuấy đều tay nấu 5-7 phút cho đậu nành kết thành những mảng nhỏ. Tắt bếp để hơi nguội.

– Trải 1 miếng vải mỏng lên rổ nhỏ, sau đó múc các mảng đậu nành cho vào bọc lại.

– Lấy 1 vật nặng đè lên miếng đậu vài tiếng để nước thoát hết ra ngoài và đậu kết thành miếng. Độ nặng hoặc nhẹ của vật chèn lên sẽ khiến đậu chặt miếng hay mềm miếng. Nếu bạn thích ăn đầu mềm vừa thì không đè nặng quá nhé.

Khi đậu nguội bạn mới lấy đậu ra khỏi khuôn bởi nếu lấy quá sớm là đậu phụ dễ bị nát.
